Memorial Day | Emma's First Pool Day

Emma had her first pool day at her Mimi and Papaw's house over Memorial Day!  I was curious to see how she would do in the sun and in the pool (especially since the water was a little chilly) but she loved it!  We popped her in this pool float and she was happy as can be.  Looks like it's going to be a fun summer!

Pregnancy Throwback | Project Nursery

This week Project Nursery shared Emma's Nursery on their blog!   It was super cool to get to talk with them about the design process and relive it all!  It's my favorite room in our house and it was so much fun.  When I was getting photos together for the post I found these photos that Austin took of me when I was pregnant that I never got around to sharing.  This was the night of my baby shower when I was 33 weeks pregnant.  My belly was already big and I can't believe that it got even bigger than this, ha!  Thanks so much to Project Nursery for talking to me!  See the blog post here!

Mother's Day | Daisy Field

Growing up, when I saw daisies beginning to bloom I knew that Mother's Day was close.  I have always had a love for wildflowers.  When the daffodils began blooming I knew that it was almost Easter, and when I saw daisies I would go out and pick as many as I could for my Mom for Mother's Day.  So I thought it was only fitting that I take Emma out to this field of daisies for our first mother's day together.  My sweet parents came along with us and it was so much fun!  Happy Mother's Day to my wonderful Mom and all the mommas out there!  I hope it's wonderful!

Emma | Six Months Old!

I can't believe Emma is half of a year old! Every day she is growing and changing so much. Her colic has improved drastically and she is such a sweet little girl. She's always laughing and talking to us. She's super into growling right now so it sounds like we've got a little monster in our house!  She loves it when I take pictures of her so we have a lot of fun with these little monthly shots.

Dairy Free Donuts

I love donuts.  I could just leave this post with that.  Since having Emma, I have had to eliminate dairy from my diet because when the milk protein gets in my breastmilk, it makes her sick.  Cows' milk is in SOOO many things and one of those things is donuts and I really miss them (boo hoo, right?).  My sweet husband surprised me yesterday by making me these really delicious dairy free donuts and I thought I might as well share the recipe he used!  We changed up the icing part a teeny tiny bit so our adaptation is below, but you can see the original here by The Purposeful Mom!

    • 3  eggs
    • 6  cups flour
    • 2  cups warm water
    • 1  tablespoon salt
    • 4  tablespoons yeast
    • 1/2  cup sugar
    • 1/2  cup shortening
    • 4     teaspoons white corn syrup
    • 1  teaspoon vanilla
    • 3 cups powdered sugar
    • 5-6    tablespoons hot water (or more if you prefer a thinner glaze)

1. In a large bowl, dissolve yeast in 2 cups of warm water.
2. Add eggs, flour, salt, sugar and lard to yeast mixture.

3. Mix well.
4. Cover and let rise until doubled (about one hour).
5. Roll out to 1/2″ thick, cutting with a doughnut cutter.
6. Let rise again, 30-45 minutes.  The donuts will be “fragile” after they rise the second time and the original poster of the recipe says to allow them to rise on something that you have sprayed with cooking oil and dusted with flour.  If not, their shape distorts when trying to get them picked up.
7. Fry until golden on one side then flip and do the other side. This takes just a few minutes per side. We used cast iron skillet with about 3/4 of an inch of shortening in it to fry the donuts.
8. Drain on paper towels and dip in glaze (flip for both sides) while donuts are still warm.
